EVO (Android) Noob. Need Some Help

Hello everyone.

Need some help, got some questions regarding Android. I've been using WinMo phones for the last 5-6 years and have been a loyal user and visitor of PPCG for about 2 years now. So, to the point. I just switched to an HTC EVO about 2 weeks ago. I have rooted it, I have flashed and rom and well, I'm becoming very comfortable with the android system (compared with the winmo one). But I have a few questions, and was wondering if you "android" guys could help me.

Let's say I want to upgrade or switch my rom (example: From OMJ 1.4 to 1.6) am guessing I'm going to loose all of the apps I have installed, right? How do I back them up and restore them? What If I want to switch form, let's say Fresh's to Damage's Rom?
