Are Sashimi and UC mutually exclusive or just redundant. Did rom makers start with UC and migrate to Sashimi? I see some people saying they support UC and others Sashimi, what do some of you think? Just skip UC and go straight to Sashimi?

Sashimi utilizes UC but also does a lot more. I think an understanding of UC is helpful for setting up Sashimi, but it depends on how complicated you want your automation to get.
