If your OEM has an option.xml it will show up in the group you chose as the same name you also chose. You just need to look again.
The only way it won't be on the list is if you maybe didn't give it a group or you put it in the "hidden" group. Another reason could be you're running from the wrong kitchen folder. You also may want to make sure there's an option.xml, and dsm file at the very least in your OEM's folder.

I went ahead and reinstalled the OEMizer and the myl OEMs are now showing up. New issue: while I was able to build an OEM with personal info ok, I can't seem to build one with imported cabs. everything seems to go okay but when I flash, the programs aren't there. I've even tried to just do one program in the OEM but no luck. Can anyone help?

Yes. I forget the syntax (you can search for it...VerizonGuy posted it). Why do you need to delete some reg entries? Needing to delete reg entries from within the kitchen is extremely rare (like never).

I've been able to make almost all the changes etc. with the OEMizer that I want to build into my rom except I can't get the Exchange settings to take. Even when I set the server, domain, username, password, check SSL, etc., and then create OEM, and check it when building OS, the account is not set up after I flash. Any help is greatly appreciated.
