Just a few clarification questions

Alright, after reading around and learning what I could I'm ready to ask some questions.

1) This Kitchen as you guys call it is it essentially a way to install the OS and also applications along with it? It would be the same thing to just install a "stock" OS from UTStar... and then install all the apps afterwards through activesink?

2) Extended ROMS are basically used to store registry modifications and settings that you don't want to loose when you hard-reset your phone?

3) If in fact you don't loose apps when you hard restart or anything and kitches are just convienent ways to get a everything installed at once, where can I find an clean kitchen to install?

Thanks a lot everyone.
