How to Modify A Kitchen ROM

I just succeffully flashed my VX6700 with one of the ROMs that does not include Mobile Office application viewers like Word, Excel, Powerpoint. I love how fast the ROM is on my Apache, but would like to be able to add those (and other) applications. Any ideas for this noob?

And, technically you can't "modify a kitchen ROM". You will just be installing software to your storage memory.
