Kitchem OEM questions from a newb

OK, i have been reading what I can, trying to keep up with the latest info. I have HELMI's latest 3.5 kitchen, can understand and implement the steps needed to create a flashable ROM from that. What my question is, or the area I don't have my head wrapped around just yet is this.

1. I want to add the programs I use to the Kitchen, so do I simply just add the directories to the OEM folder and let the Kitchen find em and encode accordingly?

2. Creating a directory for something that i want to install, such as weather panel which I don't see on the ftp in the oems section yet, is there a tutorial somewhere outlining the steps to take my programs and create my own OEMs for em?

3. I assume the initflash file outlines where/what the kitchen does with files and directories when creating the ROM?

I thank you all in advance, and hope my questions make some sense

You can add the kitchen OEMs from the ftp to the OEM directory to have them load, but you might want to take a look at this thread: http://www.ppcgeeks.com/kitchen-oems-t2522.html

I think that one has the answer to all of those questions.
