the holding power thing was just to get it to DFU mode, so once the script starts running you're good to let go like you did.

I think I found the solution for your problem, if this works let me know so I can update the OP.

run redsn0w on it again to "jailbreak" it, but select the "just boot tethered right now" option and it should work fine. Since you have a new bootrom 3GS, you have to do this every time you turn on your phone (although I rarely ever turned off my iphone) till Comex comes out with an "untethered" jaibreak (soon)

If I select that option, will "cydia" still be installed because it becomes unchecked when I select the other option you mentioned.

Yes since its already installed. Just do it and everything should work.

There is no icon for "Cydia" so it was not installed as I thought it wouldn't be...
"Safari" works now - it didn't work before but just no "Cydia".
any ideas ?

ok, I got it....

I jailbreak it - tethered only (selected)

jailbreak it again - install cydia (selected)
(Neither cydia or safari work at this point)

jailbreak it again - tethered only (again selected)
reboot

-> cydia icon finally shows up...
safari also works

Now that I am running a tethered boot setup, how do I actually get my phone to boot up when tethered to a computer ?
With the phone plugged in, do I have to run an particular software or program ?
I've been running the "redsn0w" every time I have to reboot the phone, is there something else I could be running ?

no,

you have to use redsn0w now till Comex releases non-tethered.
