Exchange email - no HTML, but works fine in IPhone??

Hello,

My workplace is still utilizing Exchange 2003 for the work emails. My Touch Pro 2 (and any previous Windows Mobile phone I had) can only download the "text" version of the emails using ActiveSync (the "html" version gets grayed out after the first time I connect to the exchange server). However all my coworkers with IPhones, or Android phones, can compose and receive HTML emails with no issues, using the same exchange server that I use.
Why is that? I have read somewhere that Exchange 2007 is required in order for our phones to support HTML emails. How come that is not the case with different mobile operating systems? Any workaround for that?

I can confirm that we have an Exchange 2K7 server and I get full HTML e-mails on all of my ActiveSync devices. I wasn't aware that 2K3 wouldn't do this.
