There's nothing in a cooked ROM you can't do yourself with enough time, energy, and research. People flash to cooked ROMs because it saves them having to hack the crap out of their phone, a ton of trail, and a ton of error... plus, it's fun and nerdy.

YMMV, but Mighty gave me a huge performance and stability increase over the stock ROM. The camera thing is annoying, but really, it's the only loss of functionality compared to the things I gained--a faster, more stable, memory efficient phone that doesn't require a soft reset every twenty minutes. And the camera thing is temporary--be patient until someone finds a permanent solution, or work on one yourself. In the mean time, it's a fair trade for everything else you get.

Just my two cents.
