You have to do this in a kitchen. XDA has several kitchens available for the touchpro. You could decompile the rom, remove what you want, then recompile it. That is as long as there is no protection in it. Of course, for someone just starting out, I would recommend starting with ppckitchen's rom. Once you get that down and can build a stable rom:
1. learn how to add other oem's to the USER_OEM directory
2. Learn how to add your own registry tweaks you want to your rom.
3. learn how to replace the graphics (mostly .png's) inside OEM's for that "custom look".
4. learn how to make your own OEM's from .cab files.

Then you will have all the skills of the average chef. Most custom roms are comprised of drag-n-drop an OEM into a kitchen and press play. And most all of the above skills are covered in my rom tutorials in my sig. I see someone linked the xda-wiki to make your own OEM's in a previous post. But just get in there and get your hands dirty.

Then once your comfortable with all that, you would have learned quite a bit about rom structure, then you can dive into a kitchen like bepe's. But quite a few are comfortable using ppckitchen's kitchen and for most, that is all you'll need... Teach yourself a little at a time, you just can't expect to obtain all the knowledge overnight...
