Press menu on the homescreen, settings, sounds and display, screen timeout, set it to never turn off, and glad that you finally rooted your Hero. I did mines this morning, flashed Fresh on it, and WOW!

Is there a way for the phone to shut off when not using the USB? Is it the same deal?

Yup its the same way, just select how long before the screen turns off
