So is the loaded, uneditable programs tab an indelible feature of the rom? I'd really like to set my own program shortcuts in there.

I'm having issues with the google maps as well. I think something is wrong with the OEM. As for youtube it's most likely related to your manila. Almost all youtube issues are related to manila. Since I switched to 6.5 and got rid of touch flo 3d I haven't had one issue with youtube.

Diamond tweaks will allow you to change both the left and right softkeys.

On a side not, have you tried the SPBMobile 3.0??? I am running it with the latest 6.5 SYS, and wow, FAST!!
