How can I prevent apps from auto starting?

There are so many apps that start u on their own on my phone, and it's very annoying. One of the is Google Talk. I don't want to be signed on at times, so I unchecked sign in automatically, but I still don't like this app (or many others) to autostart, and restart when closing the.

How can I solve this problem?
