Personally I make individual folders for the type of apps, allows me to have just one home screen with most of my folders.

how do you name the folders? when i try to add folders, i can only choose from a preset list of names or the default name 'folder' and i cant seem to change it.

Open the folder.
Tap and hold on the folder name once it opens up and you will be able to change the folder name here.

Love the folders but need to change the icons. How?

Oh i just use LauncherPro Plus and make it into a 8x8 grid and resize everything to the size I want, works just as well without installing extra. And still runs smooth.
