I think this sort of thing is now possible using the provxml files. Looking through the ones in the "Optional_Verizon_Settings" OEM seems to show how to delete files. From "mxipcold_oemoperators_100.provxml"...

I am talking about deleting in the kitchen itself and not in the device. You have to delete before the build process.
