There may be a better way through more advanced configuration, but the only menu driven way that I can see is if you go into Activesync on your phone and change the synchronization schedule to manual. The downside to this is that you can't set it for individual connections
AFAIK, so if you sync over the air with an exchange server then it will switch that one to manual synchronization as well. =/
