If you uploaded a picture from your PC or Sd card onto your device and set it as the background, then you will not have a landscape version until you have a 320x240 version (240x320 is portrait) of it as well.

Look for a program called ThemeGenCe. It is a theme maker and you can input images into it and it will create portrait and landscape backgrounds as well as many other tweaks in a .tsk file; this file is what your devices uses for Today Screen themes. Once you make a .tsk with your desired theme, place it in the \windows directory. Soft reset. Then go to Start-->Settings-->Today and you will see it in the list of Today themes...
