It's very possible and pretty easy. Download cfcgui from xda. Connect your device and run the program. Choose the import from device option. That will give you all of the manila images on your phone. Scroll through and find all green ones. Export the green ones to png. Edit png's to desired colors. Import pngs to proper manila file. This can all be done with cfcgui and photoshop, etc.

Then you can look in \windows and search for png's. You will see some of the HTC green used in menu's, etc (ie btn_common_checkbox.png). Edit them and copy them back to \windows. It may consume some time, but is very realistic to do.
