Also, while on rooting, I actually brought a separate microSD card to make the Nandroid backup on. Is this a good/bad idea? Is the best way to do this to make a copy of the SD card on the PC, do the root and flash with a clean card) and then copy everything back to the card? I have an 8 GB card that is nearly full. Don't know how much space is required on the card to root/flash.
First off, the release of the kernel is for developers. It doesnt mean anything to you until someone releases a rom. In regards to a 2.1 release, there is no specific time for the release after the kernel is released

Root now. Atleast while you are waiting for 2.1 you can have some fun. If 2.1 is going to require additional rooting, you are gonna have to wait anyway.

About the extra SD card. Do you have a computer? Just copy the nandroid folder from your SD card to your computer. A second SD card with the nandroid isnt necessary.

Just make sure there is atleast 120 mb on your card before you flash. Rooting isnt going to add anything to your memory card and the recovery image is like 3.2 mb.
