Without a ready fix available for this odd little glitch I decided to simply hard reset and restore from a 2 day old backup. When restoring my mail settings the problem remained so I tried to re-hard boot and restore again but WITHOUT the mail settings. After recreating the mail settings manually everything seemed to work as normal.
I still don't know what caused the problem and what the actual fix would have been but this did seem to take care of the issue.
