You misunderstand...

The "kitchen" is actually short for three pieces of software: BuildOS, which assembles ROMs for all kinds of devices/OSes; the kitchen SYS/OEM/ROM files, which are device and OS specific; and OEMs, which are generally not device specific.

You can load a WM6 Apache ROM on a WM5 Apache (because they're the same device), but you can't load an Apache ROM on a Titan, a wizard, a Q, or any other device.

In short, if you have the same device a ROM is designed for (like Apache or Titan), you can load it. That ROM will contain a specific OS - WM6 or WM5, currently - depending on which kitchen was used to build the ROM. If you had kitchen files for some other device/OS combination, BuildOS would be able to assemble a ROM for that device containing that OS. What buildOS can't do, and the comboboxes in the toolbar might have implied to some that it can do, is build a Titan rom from an Apache kitchen, or a WM5 rom from a WM6 kitchen.
