For the softkeys, you can change them using diamondtweak or advancedconfig (I think anyway) or edit the registry using the keys below (assuming you're using manila):

This is what I use to set my leftsoftkey to Weather which opens SecondToday for WeatherPanel. HomeLSKPath is the path to the program you want to open when you push the left softkey. HomeLSKText is the name that will be displayed for the left softkey. RSK ones are for right softkey

. If you want to cook these into your ROM, just make a new folder called zzTREmp77 - Tweaks in the common EXT folder. Then copy your the text in the code box (with your settings) into a text document and save it as app.reg (no .txt extension). Then put that inside of your Tweaks folder. You may need to have an empty folder inside of your tweaks folder named 'files' for it to work. I put it in mine, but haven't tested it without it to see if it is still read by my kitchen.
For your second question, I don't think I'd use 6.5.1 packages with 21857. Calkulin separates them based on compatibility I'm sure.
