Well to get your mail from your Outlook to your phone you will have to sync somehow, either it be wirelessly via BT or wired. However, if you have a data plan on your phone you could always connect via 'data line' and download your mail that way.

As for IM apps. I used to use IM+ (which is a paid for app) but recently converted over to Palringo (which is a free app and a bit better IMHO)
