How do I remove Opera Mini?

I go to
Settings>System>Remove Programs

and I don't see Opera Mini listed.

If you are referring to the Java application Opera Mini, then you will have to remove it from within your Java client. In most Java MIDlets, that would involve running Java, going to "Applications"-->highlight "Opera Mini"-->"Menu" (Right soft-key)-->"Actions"-->"Uninstall" and allow the process to complete.
