Anyone upgrade to the new windows mobile? if so how did you do it and how is the performance, thanks?

Not possible yet, you need theunlocker. This only will be possible via custom roms.

...or if VZW decides to release an updated stock ROM at some point. They have done at least one refresh for their VZW devices but if it happens, it will be a while...

A "refresh" is a large-scale roll-out of new hardware or firmware.
