gmail account with multiple folders/filters

how do you make this work with the Diamonds email client, I want to be able to see when I get a new email in any of my subfolders, not just the inbox

I think this is what you need. The adjustment needs to be done at Gmail so that it forwards what you want to your phone. The phone just takes whatever Gmail gives it, so there are no settings you can change on your phone to change what it receives.

would you possibly know why the "show in IMAP" doesn't show up on any of my labels in gmail?

I have IMAP and POP3 enabled

Are you in Settings/Labels? Also, did you enable the "Advanced IMAP controls" in the "Labs" tab?
