Sounds like you need to start by doing some serious reading....

But, here goes a high level overview to getcha going.

1.Download a Kitchen for the Diamond. I prefer the one from Ghetto and
Tobey. Download the kitchen, and the latest OEM and SYS packages.

2. Extract everything to a temp directory (c:\Kitchen)
3. Run Manilla Editor and point it to the C:\Kitchen\OEM\Manilla directory
4. Edit until your hearts content
5. Build and flash a new ROM using the kitchen, OR, export the changed manilla files from Manilla Editor and copy them to the \Windows dir on your device.
6. Enjoy
7. 2 days later, decide you want something else, repeat fom step 3.

Good luck, and read up!
