Where do i learn to cook

i have some roms i wanna test but i also want to take off some programs before i install it (example i have mightyrom or sprints updated rom on my pc and before i send it to my phone i want to edit the mighty roms by taking off some of the mightyrom.exe) Can i do this ? If yes where to get started?

all i wanted to do was take a few things out of the latest original sprint build i doubt anyone would want it.
