help: how to upgrade a rom?

i want to get into creating my own roms but I'm overwhelmed. to get my feet wet, i wanted to upgrade and modify a current rom i like from a popular chef instead of starting from scratch. so how do i bring up say one of omj's roms up into calkulins vk?
