Its not the kernel doing it, I don't think. I am using a kernel very similar to the SholesMod kernel and it runs cooler.

Installed the Sholes 2.0.5 ROM, no problems so far.
What SetCPU profiles should be set and to what values. before I increase the frequency beyond 600 Mhz??

Mine are all set to 550/250, and for failsafe I did 45c.

I definitely notice speed enhancements when I install different kernels. I actually just went to AdamZ's new kernel and it's very nice. He's added nand prefetch which seems to make a difference.

Yep. Liking his kernel, verrrry much. I heard higher overclocks are unstable though.

I clocked down to 800. The nand prefetch feature seems to make up for the performance loss from the lower clock speed.
