Sholes 2.0.5 rom is now up to 1.2ghz and is running great.

i never even tried a sholes rom.. i've used maybe 2-3 roms total.. xDi hear people being able to get higher OC results with 2.0.5 tho.

once you click auto detect and then you should just be able to slide the sliders over to your desired OC heres a screenshot of mine.

Yes. You will have the option in the SM Updater to flash it. You should definately work your way up to 1200mhz in increments. I made the mistake of bumping it all the way up and then my phone would freeze up right after boot every time. I eventually had to install my nandroid backup to fix my phone. Setting profiles is also a good idea so that it is not constantly running at 1200mhz.

I will try to do that tonight especially the slow increase in speed using SetCPU. Are there recommended profiles when the top speed is 1200 Mhz?

Sholesmod 2.05 runs hot for me. About 5-7 degrees hotter in fact, at the same speed as my own setup.
