Delete 3-sided cube, add folder

Hi all, two questions: Would it be possible to delete the side with only 3 apps, meaning I'd only have the dialer and 6-app screen? I hate that 3 app side and don't really want it. Also, is there a way to link to a FOLDER? I am an RN and use about 15 skyscape nursing programs a day, I'd like to have on the 6-app side a folder called "Skyscape" or something that let me view/choose from there. Thanks!
