for outgoing pop mail, always use your carriers outgoing smtp server, for instance, me being with telus, I use smtp.telus.net even though my e-mail accounts are with shaw cable. incoming has to be through a global incoming server as well, some isp's use different pop servers depending on the network i.e. for shaw, pop.shaw.ca can be queried from any network, wheras their defauld pop server shawmail.cg.shawcable.net can only be queried if you are connected to their network.
edit: the return adress will be whatever the mail account is setup to display, outgoing server used is just a portal, and has no bearing on what the recipient see's
