Adding new Email to old Contact through Messaging Impossible!

Contacts all synced up etc. Set up a few email accounts in the phone too. The issue is-

When I receive and email on my phone from a person already programmed in my Contacts, but they are using an email address new to me, I want to update the contact with their new email. However, when I have the email open and click the sender's contact name at the top of the email, a new screen comes up with -

Verify E-mail Address is correct:
(email address then listed in an editable area)
'Send Email by EmailAccount1'
'Send Email by EmailAccount2'
'Send Email by EmailAccount3'
'Save To Contacts'

Clicking 'Save To Contacts' instantly creates a new Contact! I have found absolutely no way to either associate with a pre-existing contact or even copy the address from either of these screens to manually update, other than just writing down the phone number on a piece of paper etc.

When I do this same process with an un-associated phone number I get the following prompt and options -

Do you want to save to contacts #####....

'Yes, Create new contact'
'Yes, To existing contact'
'Cancel'

And that works perfectly.

Am I missing something or....?
