Yes that's a problem with Google contacts, and won't change until they fix it on their side. If we all pester them about it, maybe they'll finally fix that, aaaannnndddd the downscaling they do with your contact photos (makes contact pictures look crap in anything bigger than a tiny icon. I use Google sync (via nuevasync.com) for email and calendar and M$ Myphone for contacts and everything else at the moment.

I just gotten used to putting the whole name in the "last name" category lol

My question is: All of my contacts are fine NOW, but how do I make it so when I change name info on a contact or add a new contact, the 'fileas' is automatically set to 'first, last'??

im pretty sure if you active sync this and open contacts in outlook, im pretty sure outlook allows it, worth a shot, but i think that is correct...hope it helps
