How do I create a ROM for HTC Mogul

Hello,
I need to know the steps in which to create my own ROM, can I download a cooked ROM and delete some items in that ROM? Can someone guide me Step By Step.
I want to do one of the two things:
1. Edit an existing WM 6.5 ROM For Titan
or
2. Create my own 6.5 ROM with bare totally no apps.

Can someone guide me becaue I need help with the PPCKitchen becuase I don't know how to use it.
