should BT be set to "discoverable" for use in car?

I'm confused about what "discoverable" is for bluetooth. I want to have my car stereo automatically connect to the phone, but I don't want the phone to be seen by other random devices (I'm sure it's only a matter of time before someone comes up with a BT-based virus/hack for nearby phones...). Do I want it set to "discoverable"? What's the right setting in the BT control panel? Can I restrict it to only pair with the devices I've defined connections to?
