If the update is coming I would wait until it gets rooted. If you root now and then accept the update I believe it will unroot. Unless you want to stay on froyo or run some of the gingerbread roms from the leak or ones that have been ported. Im running a gingerbread rom with sense 3.0 now and will prob stick with it unless the devs can make improvements using the sprint update.

I'm assuming that the new update will "wipe" the device, and all my apps will need to be reinstalled?

Do I need to restore the Sprint apps I removed before I do the update?

Go ahead and do the root now. By tomorrow afternoon the OTA will have been deodexed and ready to flash to your now rooted phone. No need to re-install the sprint bloatwear, it will be updated in the now deodexed rom.
Its best to be rooted now so if there are issues with the new rom you can do restore back to your old rom.
