Software the "jailbreaking guys" use to backup and restore different customer phones

I have seen these guys backing up and restoring phones from different customers on their PC computers, and I am curious as to what software they are using to accomplish this because I would like to be able to keep multiple backup sets of my own phone that I could go back to.
I tried asking one guy who did a jailbreak on my phone about 6 months ago or so and he wouldn't tell me what I wanted to know but instead referred me to itunes.
If anyone here knows what software is being used and where to get it from - I would greatly appreciate the information.

You can back it up in itunes. Just change the name of the phone to the date, back it up, then change it back. Because the name of the phone is different, it doesnt replace the backup like it would if you didnt change the name.

ok, sounds good but how many different backup sets can I have and how do I access the different ones ?
Has anybody else done this ?
Do I have to do a restore to see the backup sets which are available ?
How does this work ?

I think you can have as many as you want doing it that way, I personally haven't tried it but I'll ask around to see if there is an actual app people use.
