The activation status of your device is generally independent of the ROM. If you activate with your ESN, Voice Plus SMS will work right away (usually), but You may need to press "update profile" or even "update prl" in the Settings area of your device to get Data to work. Even then, you may have to wait.

For me, both were instant. This is on Boost Mobile though. This "cricket" that you speak of may be a bit slower at activation. From the looks of their site and their map, Cricket looks like a pretty lousy service. Boost Mobile now has shrinkage which can get you unlimited SMS, Voice, and Network for as low as 35 dollars per month after you stay with them long enough. Unfortunately, you need to have a Sprint device before doing this, so it may or may not be the best route for you depending on where you live or if you're able to pick one up.
