Gmail IMAP keeps changing settings automatically

So I am running android 2.2 on a EVO, I dont like using the gmal app on the android and would rather use the regular mail app and just check all my emails addresses from that one program. Well, I setup gmail on there as IMAP and everything works fine. But for some reason, when I set my settings to customize the peak hours vs non peak hours, max size, disable signature, etc. It keeps reverting back to system defaults and does not stay.

So I gave up and just decided to enable pop3 on gmail from my google settings and set it up that way. It works and my settings stick, but for some reason using this method it deletes my emails automatically after viewing them. I have tried changing the settings on google direct where is says "When messages are accessed with POP" .....drop down gives option of "delete Gmail's copy" and "Keep Gmail's copy in the inbox" It doesnt matter what I choose, on the next refresh it will disapear from my EVO inbox without deleting it.

Any ideas?
