I created my own with the 3.5.1.0.4 kitchen using a mix of pre and self made OEM packages.

Custom OEM with ringtones, theme and a very large rgu file for my registry edits

I keep mine very light as I don't do a whole lot on my phone other than check our Exchange email, make phone calls and occasionally remote into a client PC (if I'm not near a PC). My rgu file is massive and makes all my custom changes to the look and feel. When I hard reset, I only have to enter my Exchange password. I used a tip to disable the startup screen and instead set all the values (time & date, screen alignment, etc) through my rgu file.

As a matter of personal preference, I don't see why anyone would use another person's ROM. With all the walkthroughs here, creating your own ROM is really pretty easy to do and you aren't stuck with someone else's preferred applications. Just my opinion.
