EVERYTHING. If you do a hard reset then restore from an SPB Backup archive, you would have no way of knowing that the hard reset had ever occurred. Your phone would have all your contacts, emails, texts, registry edits, Google Maps/Footprints/whatever other program favorites, settings, etc. exactly as when you started the backup. [edit] Similarly, if you back up one phone and restore to another (of the same model and ROM), you would only be able to tell the two phones apart by looking at the serial numbers or distinguishing scratches.
It'll also backup and restore mistakes and errors, including bad regedits that cause problems. That's another reason frequent backups are so important: they allow you to go back to a time before a problem appeared and restore the setup from then.
