I have found success (though not easily) making file associations and assigning icons to file types on my Sprint Touch by using GSFinder+. It's a bit finnicky, unclear, and slow, but very powerful once you figure out how to make your wishes stick. Do you remember WinFile from back in the Windows98 days? GSF+ does file associations and icons much like a pocket version of old winfile. GSF+ is freeware, needs very little memory, and is highly configureable. More info here:
