Then don't flash. Trying out new things isn't for you. No problem. Some people don't like taking on new known and unknown problems in trade for fixing existing problems. It sounds like you would rather live with the existing problems of the original device.
Or to put it another way: Updating your device with a new custom firmware/ROM is a trade off. One one hand you might have a few new bugs that exist in the new ROM where things that had worked no longer function. On the other hand you will get a lot of things fixed that didn't work well in the original factory ROM. You'll get a lot of settings tweaks and other work done for you.
In the end: If you don't want to mess with your phone, don't want to run the risk of getting a new bug while fixing other bugs, and you don't want to customize your phone then maybe Windows Mobile wasn't the best choice for you at the beginning. Windows Mobile does take some work to make it realize its potential.
