To get rid of the clock, just choose option 6 for the clock in settings, which should be blank if you're using the latest version of S2U2.
As for the date, you'd have to edit the registry by going to
HKEY_CURRENT_USER/Software/A_C/S2U2
And clicking on "DateFormat" and deleting the letters in that key such as "dddd', 'd MMMM" and leaving it blank.
That should do what you want
