Judging by the very simple needs you've listed, you will do very well with any of the roms based on Helmi's latest (R4) WM5 kitchen. Examples include Jeff Kirvin's clean and simple (available on the ppcgeeks ftp), Phoenix's clean and simple (on his thread), and the Colonel's latest (also on the ftp I think). Or you could download the kitchen yourself and create your own bare-bones rom. One thing I've learned from using others' roms is you never know what you're missing until you try a few out....

Re. WM6, Helmi's release is absolutely fantastic (I understand), but there are still some minor bugs being worked out. Specifically, if you use WPA-PSK security for WiFi network connections, then you may want to hold off of this for a little while.
