For that, I've tried multiple softphone clients for Windows Mobile (Xten, Fring, etc.) some are commercial/paid software and some were free. The one that I ended up liking the most (the sound quality was the best on) was SJPhone which is free.
The setup of SJPhone isn't all that intuitive, so if you need help setting it up just let me know. You can get it from here:

I'm using the one for Windows Mobile 5 (which also coincidently, works great with WM6).
