Mightys is really good. You'll have to make sure you are closing programs and not leave them running in the background , because of the lower RAM available on the Verizon Touch Pro but as long as you keep an eye on your available RAM you should be fine. Mightys is a good ROM to try so you can see what these things are really capable of. Worst case is you dont like it and you can try somebody elses or simply flash back to the Verizon stock rom.
After you have tried a couple of "feature" Roms like Mightys , if you decide you want to try a "speed" ROM I highly suggest a
lllboredlll custom ROM or kitchen
