Nice writeup. Some minor clarifications:
The memory size of the CE ROM is 64 MB. We squeeze more into the kitchen because it's compressed. The compression yields the effective 75-84MB.
Without all the crap-ware, you should have a little over 40MB of storage memory (what you called Main Memory).
In general, programs that have to be available immediately (like dial pads, keyboards, ringtones, etc) won't like being installed on storage cards. This is because the storage card is slower and doesn't "wake up" from suspend states as fast as the other memories do. Storage cards perform better with the 3.5 kitchen roms than stock roms, so some applications that wouldn't work from an sd card may work better under 3.5 roms.
The 3.5 kitchen resolves not only permanent removal of crap-ware (freeing up the extended rom and a lot of program memory), is better tuned, and has more features, but also contains fixes for various bugs that the stock ROM does not (like bluetooth and storage cards are flaky on the stock rom, but solid w/ kitchen roms).
The kitchen allows you to effectively load more stuff onto your phone by letting you "cook" some applications into the CE ROM image. Not all applications can be cooked (well, not all should be cooked and not all have been preped for cooking). The kitchen also frees up the extended rom segment (10MB) by baking the important parts into the CE ROM.
If you decide to use the 3.5 kitchen, please remember to clear your extended rom and/or not allow auto-customizations to run at first boot (just push the reset button when the "customizing in 3 seconds..." popup shows)
There is no way to speed up specific wireless connection types.
